Creamed Zucchini Casserole
6 small zucchini (sliced thin)
1 (8 ounce) container sour cream
2 tablespoons butter, melted
8 tablespoons Cheddar cheese, grated (divided)
1/2 teaspoon seasoned salt
15 Ritz crackers, crushed

Cook zucchini until tender; drain. combine sour cream, butter, seasoned salt and 7 tablespoons of cheese. Add to zucchini and mix gently.

Place 1/2 of cracker crumbs on bottom of casserole dish. Pour zucchini mixture over crumbs and top with remaining cracker crumbs and cheese. Bake at 375 degrees for approximately 10 minutes.

Makes 10 to 12 servings.
