Egg Drop Soup
3 cups clear chicken broth
2 tablespoons butter
1 tablespoon cornstarch
3 tablespoon scallion, chopped
1 egg

In medium size saucepan; bring the chicken broth to a boil. Add the butter and boil until it melts. Mix the cornstarch with approximetaly 1/4 cup water until smooth. Add to the chicken broth and stir constantly until it thickens.

Break the egg into a small bowl and beat it with a fork. While stiring the chicken broth with a fork; slowly add the beaten egg. Pour the soup into bowls and Garnish with the chopped scallions.

Makes 2 servings.
