Beef Noodle Soup

1 pound ground beef or turkey
1 (46 ounce) can V-8 juice
1 (3 ounce) envelope dry onion soup mix
1 package Beef Ramen Noodles with seasoning packet
1 (16 ounce) package frozen mixed vegetables

In a large saucepan, cook meat over medium heat until no longer pink. Drain. Stir in V-8 juice, soup mix, noodle seasoning packet and mixed vegetables. Bring to a boil. Reduce heat, simmer uncovered for 6 to 8 minutes or until vegetables are tender. Return to a boil. Stir in noodles and cook for 3 minutes or until noodles are tender.

Makes 6-8 servings.
