Summer Vegetable Casserole
1/4 cup onion, chopped
1 medium zucchini, chopped
1 can cream of chicken soup
1 cup sour cream
1 cup carrots, shredded
1 (8-ounce) package herb stuffing mix

Cook onion and zucchini until almost tender. Combine with soup, sour cream and carrots. Prepare stuffing mix according to package direction. Grease a 7" x 12" pan. Place half the stuffing in bottom of pan and top with vegetable mixture, then with remaining stuffing. Cover with foil and bake at 350 degrees for 30 minutes.

Makes 4 servings.
