Rice and Vegetable Medley
1 cup cooked rice
1/2 cup chopped onion
4 teaspoons vegetable oil
1 cup chopped fresh tomato
1/2 cup chopped yellow or sweet red pepper
1/2 cup water
1/2 teaspoon salt
Pepper to taste
1 cup frozen peas

In a skillet over medium heat, sauté the rice and onion in oil until rice is lightly browned. Add tomato, pepper, water and salt. reduce heat. Cover and simmer for 5 minutes. Stir in peas and heat through.

Makes 4 servings.
