Noodle Pudding w/Broccoli or Spinach
1 (8 ounce) package Kluski noodles (if you can't find them, use medium egg noodles)
1 package Lipton onion soup
1 package frozen chopped broccoli or spinach
1 stick margarine
1 cup Coffee Rich
3 eggs

Parboil noodles 5 to 10 minutes until tender, drain. Place noodles in large bowl and mix with melted margarine. Partially cook broccoli or spinach and drain well. (You can put in microwave for about 3-4 minutes). Add the vegetables to the noodles.

In a separate bowl, beat eggs and onion soup together. Add Coffee Rich and mix. Add this liquid mixture to the noodles and mix well (mixture will  be mushy). Pour into a greased 1-1/2 quart baking dish. Bake at 350 degrees for 1 hour or until set. Cool slightly before cutting.
