No Crust Zucchini Quiche
6 cups (2 medium) zucchini, shredded
8 ounces shredded Swiss cheese
4 eggs
1 cup buttermilk baking mix
1/4 cup salad oil
1/2 teaspoon salt
1/4 teaspoon Italian seasoning

Preheat oven to 400 degrees. Grease a 9 inch pie plate. In large bowl, with fork, mix all ingredients. Pour into plate. Bake for 30 to 35 minutes, or until golden brown and a knife inserted in middle comes out clean.

Makes 4 servings as a meal or 8 as a side dish.
