| Mushroom Rice | |||||||
| 2-1/2 cups uncooked regular rice 5 cups water 1 onion, chopped 1 green bell pepper, diced 1 red bell pepper, diced 2 cloves garlic, chopped 1/2 cup celery, diced 4 cups mushrooms, sliced 1/4 cup vegetable oil 1 tablespoon sage 2 teaspoons thyme 2 teaspoons parsley Salt and black pepper to taste Preheat oven to 350 degrees. Saute onion, bell pepper, garlic, and celery until almost soft but not browned. Add mushrooms, sage, thyme, parsley, and salt and pepper. Saute a few minutes more. Add water. Stir and bring to a boil. Add rice and stir well. Cover and carefully transfer to oven. Bake for 1 hour (or until rice is done). Do not stir or uncover while cooking. Fluff rice. Makes 6 to 8 servings. |
