Lokchen Kugel (Noodle Pudding)
8 ounces medium noodles, cooked and drained
1/2 cup melted butter or margarine
1/2 cup sugar (you can use less if you want it less sweet)
1 teaspoon cinnamon (optional)
4 eggs separated
2 cups cottage cheese
1 cup sour cream
1/2 to 3/4 cup cornflake crumbs
Butter or margarine to dot on top

Beat egg yolks; add sugar, cinnamon and butter. Fold in cottage cheese, sour cream and noodles. Beat egg whites until stiff and fold into other ingredients. Grease bottom of 13x9x2-inch baking dish and sprinkle 1/4 cup cornflake crumbs evenly on the bottom. Pour noodle mixture into pan and evenly sprinkle the other 1/4 cup of the corn flake crumbs on top. (Use a little more if needed to cover entire top of casserole.)  Dot with the butter.

Bake at 375 degrees for 45 minutes or until eggs are set and it is hot all the way through. Serve as a main dish or as a substitute for potatoes.
