Fruit Dressing

1/2 cup chopped onion
1/2 cup chopped celery
1/3 cup butter or margarine
2 cups croutons
2 cups cooked rice
1/2 cup raisins (cooked in water and drained)
1 cup crushed pinapple (drained)
1 cup chopped red apple
1 teaspoon salt
1 teaspoon pepper
1 teaspoon poultry seasoning
Orange juice

Saute onion and celery in butter until soft. In a large bowl, combine croutons, cooked rice, cooked raisins, pineapple, red apples and seasonings. Add sauteed onion and celery. Bind with orange juice. Bake at 350 degrees for 1 hour.

This is an excellent side dish for turkey, ham or chicken.
