Applesauce
9 Golden Delicious apples, peeled, cored and chopped
3 tablespoons lemon juice
3 tablespoons brown sugar or 1-1/2 tablespoons honey
2 tablespoons water (add more if needed)
1/2 teaspoon ground cinnamon

In a 4-quart saucepan, combine the apples, lemon juice, sugar or honey, water and cinnamon. Cover and place over medium-low heat. Cook, stirring frequently, for 20 to 30 minutes, or until the apples are very tender. Transfer to a large bowl, coarsely mash, cover, and chill.

Makes 8 servings.
