| 2 tablespoons butter 2 tablespoons flour 1/2 teaspoon tarragon 1 cup milk Salt Freshly ground pepper Melt butter over moderate heat (do not brown). Add flour and whisk until well blended. Add milk while stirring the flour mixture vigorously. Stir until thickened, then stir in tarragon. Simmer for 5 minutes. Season to taste. |
