| Cheese Sauce | |||||||
| 1 tablespoon butter 1/2 tablespoon flour Salt and pepper to taste Pinch of cayenne pepper 1 cup milk 1 egg yolk 1 tablespoon parmesan cheese Melt the butter in a small saucepan and stir in the flour and seasonings to taste. Add the milk. Stir continuously until sauce thickens. Remove pan from heat and stir in the egg yolk. Stir in the cheese. Serve with poultry. Makes about 1-1/4 cups sauce. |
