Beer Marinade
2 (12-ounce) bottles of any lager-style beer
1/2 cup finely chopped fresh basil
1/4 cup fined chopped fresh tarragon
2 to 3 tablespoons finely chopped fresh thyme
1/4 cup chopped shallots
6 garlic cloves - pressed
1 tablespoon coarsely cracked black peppercorns
1 teaspoon kosher salt
1 cup olive oil

Combine the beer, herbs, shallots, garlic, peppercorns and salt in a non-reactive mixing bowl. Whisk in the oil a little at a time.

Makes 4 cups.
