Tangy Apple Salad
3 apples
4 heads Boston or Bibb lettuce (or 1 head Romaine lettuce)
2/3 cup plain low-fat yogurt*
1 tablespoon orange marmalade
Freshly ground black peper to taste
1/4 cup sliced almonds

Mix yogurt with marmalade and pepper. Tear lettuce into bite size pieces. Cut appples into small cubes. Mix lettuce, apples, almonds, and dressing. Serve immediately.

Make 5 servings.

* Can use vanilla yogurt for a slightly sweet flavor.
