Orchard Spinach Salad

6 cups spinach leaves
1 can (16 ounce) sliced peaches or pears, drained
1/2 cup sliced water chestnuts
6 cherry tomatoes, halved
Gingered Vinaigrette (below)

Thoroughly clean spinach; drain and tear into bite-size pieces. Combine ingredients and serve with Gingered Vinaigrette.

Makes 4 servings

Gingered Vinaigrette
1/4 cup oil
3 tablespoons white wine vinegar
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
Dash salt
Dash black pepper

Thoroughly blend all ingredients.
