Mexican Salad w/Avacado Dressing
3 tomatoes, wedged
3 cups black olives, sliced
1 small purple onion sliced thin
6 cups shredded lettuce
3 tablespoons cilantro or parsley

Arrange the vegtables on plates or in bowls. Evenly sprinkle on the cilantro or parsley.

Dressing
1 ripe avocado, mashed
3/4 cup sour cream
1-1/2 teaspoon lime juice
1/2 teaspoon cumin
1/4 teaspoon salt
2 tablespoons oil

Mix well and chill overnight. Spoon on salad.
