Marinated Mushroom Salad

1/2 pound fresh mushrooms (sliced thin)
1/2 cup shredded carrots
1/2 cup thinly sliced celery
2 tablespoons finely chopped onion
2 tablespoons cider or cider vinegar
1/2 cup vegetable oil
1/2 teaspoon salt
Dash of pepper

Put all ingredients in a bowl and toss gently to mix. Chill. Will keep 2 to 3 days in refrigerator.

Makes 4 servings.
