4th of July Potato Salad w/Dill
8 baking potatoes, cubed and boiled
1 medium onion, chopped
2 stalks celery, chopped
1-1/2 cup mayonnaise
1-1/2 teaspoon Dijon mustard
1/2 cup parsley, chopped
1 teaspoon dill weed, finely chopped
1/4 teaspoon white pepper
Salt and pepper to taste

Boil potatoes to fork tender and mix with onion and celery. Set aside. Mix mayonnaise, mustard, herbs, and seasonings together. Fold mayonnaise mixture into potatoes and let sit refrigerated for a couple of hours.
