Turkey Hash
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped green bell pepper
2 to 3 tablespoons chopped red bell pepper
4 tablespoons butter
1-1/2 cups cooked turkey, chopped
1 cup turkey gravy
1 tablespoon chopped parsley
Salt and pepper, to taste

Sauté vegetables in butter until limp. Add remaining ingredients and simmer until blended, about 15 to 20 minutes. Serve over mashed potatoes, rice or hot buttered noodles. The hash is better if made the day before, and it freezes well.

Makes 4 to 6 servings.
