| Chicken Parmesan | |||||||
| 1/2 cup bread crumbs 1/4 cup grated parmesan cheese 1 egg, beaten 4 boneless chicken breasts 3 tablespoons butter 1 (8 ounce) can tomato sauce 1/2 cup water 1/4 teaspoon dried oregano 1 cup shredded mozzarella cheese Combine bread crumbs and parmesan cheese. Dip chicken in egg and then in your crumb and cheese mixture. In a large skillet add butter and chicken and cook chicken about 3 minutes on each side. Combine tomato sauce, water and oregano and pour over chicken. Reduce heat, cover and cook 25-30 minutes. Sprinkle with mozzarella cheese, cover and cook until cheese melts, another 5 minutes maximum. Makes 4 servings. |
