Potato Casserole
2 cups cottage cheese
1 cup sour cream
5 cups sliced or cubed, cooked potatoes
1/4 cup grated cheddar cheese
1/3 cup chopped onion
1 clove garlic
2 teaspoons salt
Paprika to taste

Combine cottage cheese, sour cream, onion, garlic, and salt. Stir in the potatoes. Pour into a 1-1/2 quart
casserole. Sprinkle with cheddar cheese and paprika. Bake at 350 degrees for 40 minutes.

Note:
If desired, you can add ham, sausage, etc., to make a meal.
