Hash Brown Potato Casserole
2 pounds (32 ounces) frozen hash brown potatoes (thawed)
1/2 cup melted margarine
1/4 teaspoon pepper
1 teaspoon salt
1/2 cup chopped onion
1 pint (16 oz.) sour cream
1 (10-3/4 ounces) cream of chicken soup
2 cups grated cheese (Colby or Cheddar work well)
Topping (recipe to follow)

Mix all ingredients (except topping) together. Pour into a lightly greased 9" x 13" x 2" baking dish. Sprinkle topping evenly over top. Bake at 350 degrees for 50 to 60 minutes until potatoes are tender and it is hot and bubbly.

Makes 12 servings.

Topping
2 cups crushed corn flakes
1/4 to 1/2 cup melted margarine

Combine well and spread evenly over potato mixture.
