Easy Hash Brown Potato Casserole
2 pound bag Ore-Ida hashbrowns, thawed
1 can cream of chicken soup
1 cup chopped scallions
16 ounces sour cream
8 ounces grated sharp (or mild) Cheddar cheese
1 stick melted butter, optional
Crushed potato chips for topping, optional

Mix all the ingredients. Save some cheese for topping. Cover with foil and refrigerate overnight. Remove cover and bake at 375 degrees for 45 minutes to 1 hour.

Makes 8 servings.
