Sweet and Sour Pork Chops
4 (6 ounce) boneless pork chops
2 tablespoons peanut oil
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 cup brown sugar
1/4 cup salad vinegar
1 cup pineapple juice
1 tablespoon soy sauce
1 medium onion, sliced
1 large green pepper, cubed

Preheat oven to 350 degrees. Brown pork chops in oil. Place in baking dish. Combine all other ingredients except onion and green pepper in a saucepan and bring to a boil. Cook for 2 minutes. Pour thickened sauce over pork chops and top with onion and green pepper. Cover and bake for 1-1/2 to 2 hours until chops are tender.

Makes 4 servings.
