Mom's Cheesecake
Crust
2 cups graham cracker crumbs
2 teaspoons cinnamon
2 tablespoons brown sugar
1/2 cup (1 stick) melted butter or margarine

In a medium size bowl mix the dry ingredients with the melted butter. Press into the bottom of a 10" springform pan. Refrigerate.

Filling
3 packages (8 ounces) cream cheese, softened
1 cup heavy cream
1-1/2 cup sugar
2 cups sour cream
1 teaspoon vinilla
2 tablespoons lemon juice
4 eggs

In a large bowl; cream sugar and cream cheese. Beat well. Add eggs, one at a time blending well after each one. Add sour cream and heavy cream and mix well. Add lemon juice and vanilla and mix in. Pour evenly into crust.

Bake at 350 degrees for 1 hour. Turn the oven off and leave cake in oven for 1 hour longer. Remove from pan and chill. This cake may be frozen.

Makes 10 to 12 servings.
