| Turkey With Pasta | |||||||
| 1-1/2 cups thinly sliced carrots 1 cup thinly sliced celery 1/3 cup chopped onion 2 tablespoons olive oil 1 clove garlic minced 2 to 3 cups cubed cooked turkey 1 (14.5 ounces) can diced tomatoes, undrained 1 (15 ounce) can tomato sauce 1 cup dry white wine or chicken broth 1/4 cup chopped fresh parsley 1/2 teaspoon basil 1/2 teaspoon salt 1/4 teaspoon pepper 3 cups uncooked ziti or similar pasta, cooked and drained In a large skillet over medium low heat, sauté carrots, celery and onion in the oil until tender, but not browned; add minced garlic and sauté 1 minute longer. Add turkey, tomatoes, tomato sauce, wine or broth, parsley, basil, salt, and pepper. Simmer, uncovered, for 20 minutes. Toss hot cooked ziti with the hot sauce. Makes 4 servings. |
