Vegetarian Casserole
1 (10 ounce) package saffron-flavored rice mix
1 (8 ounce) package 1/3 less fat cream cheese, softened
1 (15 ounce) can Veg-All brand mixed vegetables, drained (low sodium)
1 cup shredded cheddar cheese

Cook rice according to package directions. Mix together the cooked rice, cream cheese and Veg-All, and spread into a lightly greased casserole dish. Top with cheddar cheese and bake at 350 degrees for about 15 minutes or just until cheese starts to bubble.

Makes 4 servings.
