Spicy Cajun Shrimp
1 pound (about 16) jumbo shrimp, finely chopped
1/4 cup flour
1/2 cup butter
1 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
1 large clove of garlic, minced
1/4 teaspoon cayenne pepper
1 tablespoon lemon juice
1 cup water

Combine flour and butter in a large saucepan. Cook over medium heat, stirring, until it turns golden, about 10 to 15 minutes. Add the onion, green pepper, celery and garlic and sauté for 20 minutes until vegetables are tender.

Add the shrimp and remaining ingredients. Bring to boil and then simmer for 3 to 5 minutes, or until shrimp are cooked and tender. Season to taste. Serve over a bed of rice.

Makes 4 to 6 servings.
