| Foil Baked Sea Trout | |||||||
| 2-1/2 pound fresh sea trout (or other similar fish) 1 onion, sliced 1/8 teaspoon each salt and pepper 3 tablespoons orange juice 1 tablespoon soy sauce 1/4 teaspoon ground ginger 1/8 teaspoon instant minced garlic 3 carrots, sliced wafer thin Preheat oven to 450 degrees. Rinse fish and pat dry. Tear foil large enough to wrap and seal fish. Lay half of onion slices on foil in shape of fish. Place fish on top. Salt and pepper the fish. Mix orange juice with soy sauce, ginger and garlic. Pour this over fish. Top with remaining onion and carrot slices. Seal fish in foil Place in shallow baking dish. Bake 10 minutes for each 1 inch of the fish’s thickness or until fish separates easily into moist but opaque flakes. Makes 4 servings. |
