Apple Walnut Pudding
1/4 cup butter, softened
1 cup sugar
1 egg, beaten
4 tart apples, peeled, cored, coarsely chopped
1/2 cup walnut pieces
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking soda
1 teaspoon ground cinnamon

Preheat oven 350 degrees. In large bowl cream together buter and sugar. Add eggs and mix. Stir in apples, walnuts and vanilla. Combine flour, baking soda and cinnamon. Add to apple mixture and stir to combine. Pour into a buttered 8x8 inch baking dish. Bake about 30 minutes or until set. Serve warm with cream, whipped cream or ice cream.
