Ambrosia Fruit Custard
1 (3 1/2-ounce) package instant vanilla pudding mix
2 cups milk
1 tablespoon lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon almond extract
1 cup pineapple chunks
1/2 cup apple, sliced
1/2 cup strawberries, sliced
1 orange

Prepare instant vanilla pudding mix according the package directions; this may require up to 2 cups milk. Stir in lemon juice, grated lemon peel, and almond extract; reserve 1/4 cup for the topping. Spoon the remaining pudding equally into 4 dessert bowls.

Toss together pineapple chunks (drained), sliced apples, sliced strawberries, and 1 peeled, sectioned orange. Spoon on top of the pudding then drizzle with the reserved pudding.

Makes 4 servings.
