Lemon-Nut Refrigerator Cookies
1 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tablespoon grated lemon rind
2 tablespoon fresh lemon juice
2 cups  all-purpose flour
1/4 teaspoon  baking soda
1/4 teaspoon  salt
1 cup  finely chopped walnuts
 
Cream shortening in a large mixing bowl, gradually add sugar, beat until light and fluffy. Add egg lemon rind, and juice, beating well. Sift together flour, soda, and salt in a medium mixing bowl, mixing
until well blended. Stir in walnuts.
 
Shape dough into 3 rolls, 1-1/2 inches in diameter. Wrap each roll in wax paper, and chill until firm. Remove waxed paper, and cut into 1/4-inch slices. Place 2 inches apart on ungreased cookie
sheets.
 
Bake at 400 degrees for 8 to 10 mins. or until lightly browned. Remove to wire racks to cool.
 
Makes 5-1/2 dozen cookies.
