Banana Cookies
2-3/4 all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup margarine, softened
1-1/4 cups granulated sugar, divided
1/4 cup packed brown sugar
1 egg
1 large, ripe banana, mashed (about 1/2 cup)
1/2 teaspoon ground cinnamon

Combine flour, baking soda and salt in medium bowl; set aside. Beat together margarine, 1 cup granulated sugar and brown sugar in large bowl until creamy. Beat in egg and banana until blended. Stir in flour mixture until combined. Cover and chill 2 hours or overnight until dough is firm enough to handle.

Combine remaining 1/4 cup granulated sugar and cinnamon in small bowl. Shape dough into 1-inch balls. Roll in cinnamon mixture; place 2 inches apart on ungreased baking sheets. Bake at 350 degrees 10 to 12 minutes or until lightly browned. Remove cookies carefully to wire rack to cool completely.

Makes about 4-1/2 dozen coookies.
