Amaretto Almond Cookies
1/2 cup butter
1/2 teaspoon grated lemon rind
2 tablespoon molasses
1 teaspoon almond extract
2 eggs
1/2 cup Amaretto liqueur
1 cup ground toasted almonds
2 cup whole wheat flour
 
Cream together butter and molasses. Add eggs, ground almonds, lemon rind and almond extract; mix well. Stir in Amaretto alternately with flour. Drop by teaspoonsful onto un-oiled cookie sheets.
 
Bake at 350 degrees for 12-15 minutes. Cookies will be golden brown when done.
