| Ham and Broccoli Casserole | |||||||
| 1 (10 ounce) package frozen broccoli, or about 1-1/2 cups chopped 4 slices cooked ham 1/2 cup shredded cheddar cheese 2 cups white sauce, recipe to follow 2 teaspoons dry mustard 1/2 teaspoon salt Dash pepper 1 tablespoon minced onion Cook broccoli until almost tender; place in buttered casserole. Top with sliced ham. Make white sauce and add cheese to thickened sauce; cook over low heat until cheese has melted. Add remaining ingredients to the sauce; pour over ham and broccoli. Bake casserole at 400 degrees for 20 to 25 minutes. Makes 4 servings. White Sauce 1/4 cup butter 1/4 cup flour 2 cups milk Salt and white or black pepper to taste Melt butter in a saucepan over low heat; stir in flour. Stir and cook for about 2 minutes. Do not brown. Gradually stir in milk and continue cooking over low heat, stirring constantly, until sauce begins to thicken. Season with salt and pepper. Makes 2 cups |
