Dirty Rice
2 cups rice, cooked according to directions
1/2 pound chicken gizzards
1/2 pound chicken livers
1/2 pound ground beef
1 cup onions, chopped
1 green pepper, chopped
1/2 cup celery, chopped
2 cloves garlic, chopped
1 tablespoon parsley, chopped
2 green onions, chopped
Dash of salt
Dash of pepper

Place gizzards and livers in a large pot and add water and cover. Bring to a boil. Boil for 10 minutes. Brown ground beef in a skillet. Drain most of the fat (leave just a little). Add chopped onions, garlic, celery, green peppers, green onions and parsley. Cook over medium heat 15 minutes, stiring often.

Remove livers and gizzards from water and chop well. Add to the beef mixture. Mix together well. Stir rice into mixture and add salt and pepper to taste. Pour into casserole dish or baking dish and heat in oven at 350 degrees for 15 minutes.

Makes 6 to 8 servings.
