Peanut Brittle
1 cup sugar
1/2 cup white corn syrup
1 cup salted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Lightly grease a cookie sheet. Set aside. Stir together the sugar and corn syrup. Microwave on High for 4 minutes. Stir in the peanuts and microwave on high for another 3 to 5 minutes until light brown in color. Add the butter and vanilla and blend well. Microwave on high for 1 to 2 minutes until it just starts to boil. Add the baking soda and gently stir until light and foamy.

Quickly pour onto the cookie sheet. Let cool 1/2 to 1 hour. Break into pieces.
