| Pineapple Upside Down Cake | |||||||
| 1 package (18.25 - 22 ounce) yellow or white cake mix. 1/4 cup butter, melted 1/2 cup brown sugar 2 tablespoons pineapple juice 1 large can pineapple slices Marchino cherries (optional) Preheat oven to 350 degrees. Prepare the cake mix according to the directions on the package; set aside. In a small bowl combine the butter, brown sugar and pineapple juice. Pour in the bottom of an 8" x 8" baking dish. Arrange the pineapple slices side by side in the sugar mixture. If desired, place a cherry in the center of each pineapple slice. Pour the cake mix evenly over the pineapple slices. Bake for 45 minutes until cake pulls away from the sides of the pan. Cool slightly. Run a knife around the edges to loosen and invert on a cake plate. Cool completely before serving. \ Makes 8 servings. |
