Carrot Cake with Pineapple
1 cup sugar
2 eggs
3/4 cup oil
1-1/2 cups flour
1-1/2 teaspoon baking powder
1-1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1-1/2 cups grated carrots
1/2 cup crushed undrained pineapple

Preheat oven to 350 degrees. Grease and flour a 9" x 13" x 2" pan, set aside. Beat sugar, eggs, and oil with an electric mixer for 4 minutes on high. Sift together the flour, baking powder salt, baking soda and cinnamon. Add to the sugar mixture and mix well. Stir in the carrots and pineapple. Pour into the baking pan and bake for 30 minutes, until a toothpick inserted in the middle comes out clean. Cool and frost. Sprinkle top of cake with chopped walnuts or pecans if desired.

Makes 12 servings.

Cream Cheese Frosting
1 package (3 ounces) cream cheese, softened
1/2 cup butter, softened
1-1/4 powdered sugar

In a medium size bowl combine all ingredients and mix well.
