Apple Pudding Cake
3 cups apples, diced and set aside
2 sticks margarine
2 cups sugar
2 eggs
2 cups flour
2 teaspoons cinnamon
1 teaspoon nutmeg
2 teaspoons  vanilla
1/2 teaspoon baking soda

Cream margarine and sugar. Blend in eggs one at a time. Sift dry ingredients together and mix into batter, along with vanilla. Fold in apples. Bake at 375 degrees for 45 minutes.
