Quiche
1 egg, separated
3 cups shredded Swiss cheese
1 pound bacon
1/2 cup green onion, cut up
4 cups half and half
6 eggs, well beaten
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon pepper
Dash cayenne pepper (red pepper)
2 pie crusts

Preheat oven to 375 degrees. Press pie crust in the bottom of a 9" x 13" pan. Beat 1 egg white and brush in over the crust. Bake in oven until slightly browned (about 10 minutes)

Mix other ingredients in the order written. Pour over pie crust. Bake at 350 degrees for 35 - 50 minutes until firm.

Note: You can bake this the night before then refrigerate and reheat in the morning at 350 degrees for approximately 30 minutes.
