Puff Pancake with Peaches & Sausage
Puff Pancake
1 tablespoon margarine or butter
2 large eggs, beaten
1/2 cup milk
1/2 cup all-purpose flour
1 tablespoon sugar
1/8 teaspoon salt

Filling
1 package (8 ounces) Swift Premium Brown'N'Serve Sausage, Maple Links
1 can (16 ounces) sliced peaches, drained
1/3 cup maple-flavored syrup
Dash ground nutmeg

To make pancake, heat oven to 400 degrees. Place margarine in 9-inch pie plate and heat in oven until melted. Whisk together eggs, milk, flour, sugar and salt until smooth. Pour into pie plate; do not stir. Bake 13 to 15 minutes or until golden.

Meanwhile, cut sausage links into halves. Combine all filling ingredient in large skillet. Bring to a boil and simmer until syrup has thickened and glazed sausage and peaches. Spoon filling into pancake and serve immediately.

Makes 4 servings.
