Blueberry Yogurt Pancakes
1 cup flour
1 teaspoon baking powder
1/8 teaspoon ground nutmeg
1 tablespoon sugar
1/2 teaspoon salt
1 egg
1/2 cup plain yogurt
1/2 cup milk
2 tablespoons vegatable oil
3/4 cup blueberries

Stir together flour, sugar, baking powder, baking soda, salt and nutmeg. Beat egg with yogurt and milk in a large bowl. Beat in oil, then add flour mixture. Stir just until combined. Batter may be somewhat lumpy.

Grease pancake griddle or frying pan over medium heat until drops of water dance when sprinkled into griddle. For each pancake, pour a scant 1/4 cup batter onto griddle. Sprinkle each pancake with a few blueberries. Makes about one dozen 4-inch pancakes.
