Onion-Cheese Bread
3/4 cup onion, finely chopped
1 tablespoons olive oil
1-1/2 cups buttermilk
1 large egg, lightly beaten
1-1/2 cups biscuit baking mix
1 cup sharp Cheddar cheese, grated and divided
1/2 teaspoon freshly ground black pepper
2 tablespoon butter or margarine, melted

Pre-heat oven to 400 degrees and lightly grease a 9-inch pie plate; set aside. Sauté the chopped onion in the olive oil in a skillet over medium heat until golden brown for 7 or 8 minutes until onion is tender. Set aside to cool.

Blend together the buttermilk and egg in a large mixing bowl. Blend the biscuit mix, onion and about 1/2 cup of grated cheddar cheese. Pour the mixture into the pie plate. Sprinkle the remaining cheese and black pepper over the top of the mixture.

Drizzle the top with the melted butter or margarine and bake for 30 to 35 minutes or until golden brown.

Let cool slightly. Cut into pie-shaped wedges and serve warm.
