Cheddar Cheese Puffs
1 cup water 
1/2 cup butter 
1 cup flour 
4 eggs 
1 cup shredded cheddar cheese, divided

Preheat oven to 400 degrees. Grease a baking sheet; set aside. In a medium saucepan, bring water and butter to a boil. Quickly add flour, stirring constantly until mixture forms a ball. Remove from heat. Add eggs, one at a time, beating well after each addition. Add half of the cheese. Drop batter by teaspoons about 1-1/2 inches apart onto baking sheet. Top each puff with a pinch of the remaining cheese. Bake for 18 to 20 minutes; turn oven off. Pierce sides of each puff with a fork. Let stand in warm oven for 5 minutes. Serve immediately.

Makes 36 puffs.
